The Best Gluten-Free Homemade Chili

Easy, flavorful gluten-free chili!

Ingredients
  • 2 lbs. ground beef
  • 2 cloves garlic, minced (about 1 TBS)
  • 1 large onion, chopped
  • 2 TBS chili powder
  • 1 tsp ground cumin
  • 1 tsp ground oregano
  • ¼ tsp cayenne
  • 2 tsp salt
  • 1 tsp sugar
  • 1 large green pepper, chopped
  • One 28 oz can tomato sauce
  • 1 cup water plus 2 additional TBS
  • 1 bay leaf
  • 1 TBS cornstarch
  • 2 cans red kidney beans, drained and rinsed
  • Cheddar cheese for serving (optional)
  • Chopped onion for serving (optional)
Instructions
  1. Place beef, onion and garlic in a large pot and season with salt and pepper to taste. Brown beef and drain excess fat.
  2. Return beef to pot and stir in chili powder, cumin, oregano, cayenne, salt, sugar, onion, green pepper, tomato sauce, water and bay leaf.
  3. Cover and simmer, 45 minutes.
  4. In small bowl, stir 2 TBS water and cornstarch until smooth.
  5. Add beans and cornstarch mixture to the pot and stir.
  6. Cover and simmer 30 additional minutes.
  7. Enjoy!
