Black Bean and Sweet Potato Egg Muffins

A healthy and easy make-ahead breakfast recipe. Gluten-Free, Dairy-Free and Low-Calorie

  • 1 TBS olive oil
  • 1 sweet potato (cut into ½ inch cubes)
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 1 tsp salt
  • 2 TBS minced garlic
  • 10 eggs
  1. Preheat oven to 350ºF.
  2. Heat olive oil over medium heat in a nonstick pan.
  3. Add sweet potatoes. Cover and cook for 10 minutes, or until tender.
  4. Add all ingredients, except eggs, to the pan and stir to combine, heating until spices are fragrant.
  5. Remove from heat and distribute mixture evenly into 12 muffin cups.
  6. Beat eggs and pour over mixture, distributing evenly.
  7. Bake until eggs are set, about 20 minutes.
  8. Enjoy!
