When I was pregnant with H, we ate So . Much . Chipotle. I had pretty intense morning all-day sickness, and it was one of the few things that didn’t make me feel sick. It got to the point that my husband began to make homemade versions of what we were ordering to save money.
That’s my favorite thing about copycat recipes. You get to eat the food you love to order at restaurants for way less money.

I mentioned in my Instant Pot and Sweet Potato Stew post just how easy it is to cook rice in the Instant Pot, so I was eager to try this recipe using my Instant Pot. With just 4 simple steps, it’s seriously easy!

To make Pressure Cooker Cilantro Lime Brown Rice, just cook the rice, mix oil, lime and garlic, chop cilantro, and mix it all together! Yep, it’s really that easy.

Stove-Top & Rice Cooker Too

I prefer to make brown rice in my Instant Pot because it comes out perfectly every time, but if you don’t own a pressure cooker you can still make this recipe! Just follow the package instructions to cook two cups of rice on the stove top (or see this post for instructions), swapping broth for water. Pressure Cooker Cilantro Lime Brown Rice (Chipotle Copycat)

Quick and simple cilantro lime brown rice in the pressure cooker!

Ingredients

  • 2 cups brown rice
  • 2 1/2 cups vegetable broth or sub water or chicken broth
  • 1 lime
  • 1 tsp olive oil
  • 1 tsp minced garlic
  • 1/4 cup chopped cilantro

Instructions

  • Place rice and broth in pressure cooker. Set manual time for 22 minutes.
  • While rice is cooking, combine the juice of 1 lime, 1 tsp olive oil, and 1 tsp minced garlic in a small bowl, then chop cilantro.
  • When rice is done, allow pressure to release naturally for 10 minutes.
  • Mix all ingredients together and serve!

    I’ve never eaten this at Chipotle but it sounds wonderful!

    If I used basmati brown rice would it change the cooking time at all?

      Hi Maryjane! I have never tried brown basmati rice in the Instant Pot, but I found this recipe: http://www.themamamaven.com/2016/10/02/how-to-make-brown-basmati-rice-in-the-instant-pot/ You could cook it according to her recipe, and then add the remaining ingredients listed in my recipe. 🙂

    In manual mode my IP has a low or high pressure option….which one do I use for the brown rice?
