It’s been all about the eggs recently here at Promisingly Pennywise. Our household sees a lot of egg recipes. I’ve said before that I’m really more of an oatmeal and banana for breakfast kind of girl, but Gary chooses eggs for breakfast nine times out of ten.
When we recently spent 30 days doing low carb, eggs became even more of a staple in our household. I love making a variety of Easy Egg Muffins, and Baked French Eggs are so easy that they are often on repeat on our breakfast menu, but I still enjoy searching for new ways to use eggs for breakfast. When I came across the pin for Kalyn’s Kitchen Broccoli, Ham, and Mozzarella Baked with Eggs Recipe, the pictures on the pin looked so easy (and appealing) that I quickly pinned it to my Breakfast Recipes board on Pinterest.
Like the name says, this egg bake is full of broccoli, mozzarella and ham (yum!).The first time I made this recipe, I used thick pieces of cooked ham, like the pictures on the original post show. I decided to make this recipe again this week before writing a Pin Test post about it. This time, all I had in the fridge was thin deli style ham, so I diced it up and threw it in. It worked every bit as well as the thicker slices of ham!
Pass or Fail?
Honestly, I’ve made this recipe so many times since the first time I tried it! I don’t even bother measuring out the ingredients anymore but just throw in however much broccoli, mozzarella and ham look right to me. That’s the beauty of recipes like these; you don’t have to be precise! It certainly makes it easier to throw the recipe together quickly since you don’t have to worry about juggling measuring cups (or washing them afterwards!)
I also don’t use the Spike seasoning listed in the recipe when I make this. The recipe states that you can use any all-purpose seasoning blend. I actually use a steak seasoning that is a blend of garlic and red pepper. This egg bake passed the Pin Test and has become a frequent breakfast dish at our house!
