Combine oats and cheerios in a food processor or blender and blend for 30 seconds to 1 minute. Set aside.
In a microwave safe bowl combine coconut oil, peanut butter and honey. Microwave in 30 seconds and stir. Continue to microwave in 30 seconds increments until able to stir completely smooth. Then, combine with egg, mashed banana and vanilla extract.
Add remaining ingredients and stir until well combined.
Drop by 1/3 cup scoops (I use an ice cream scoop) onto a parchment paper lined baking sheet and flatten slightly.
Bake for 12 minutes.
Allow to cool and enjoy!
I recommend using golden flax seed if available at your local store. We've found large bags for sale at both Sam's Club and Costco in our area.
